 Shawarma is a popular Middle Eastern dish made with seasoned meat (usually chicken, beef, lamb, or a combination of these), cooked on a vertical rotisserie. It is typically served in a flatbread wrap with various accompaniments and sauces. Here's a general guide on how to make shawarma at home:

Ingredients:

For the marinade:

  • 1-2 pounds of boneless chicken, beef, lamb, or a combination of these, thinly sliced or cut into small, thin pieces
  • 1/4 cup olive oil
  • 4 garlic cloves, minced
  • 2 tablespoons lemon juice
  • 1 teaspoon ground cumin
  • 1 teaspoon paprika
  • 1/2 teaspoon ground coriander
  • 1/2 teaspoon ground turmeric
  • 1/4 teaspoon ground cinnamon
  • Salt and pepper to taste

  • Pita bread or flatbreads

Instructions:

  1. Prepare the marinade: In a mixing bowl, combine the olive oil, minced garlic, lemon juice, ground cumin, paprika, ground coriander, ground turmeric, ground cinnamon, salt, and pepper. Mix well to form a smooth paste.
  2. Marinate the meat: Add the thinly sliced meat to the marinade, making sure all the pieces are well coated. Cover the bowl with plastic wrap or put the meat and marinade in a resealable plastic bag. Refrigerate for at least 2-4 hours or overnight for the best flavor.
  3. Cooking the meat: If you have a vertical rotisserie, thread the marinated meat onto the rotisserie skewer and cook it according to the manufacturer's instructions. If you don't have a rotisserie, you can cook the meat on a grill, in a pan on the stovetop, or in the oven. If using a pan or oven, cook the meat until it's fully cooked and slightly charred on the edges.
  4. Prepare the accompaniments: While the meat is cooking, prepare the toppings and sauces. Chop the lettuce or shred the cabbage, dice the tomatoes, slice the onions, and have the pickles ready. You can also make or purchase tahini sauce, garlic sauce, or hummus to serve with the shawarma.
  5. Warm the bread: Warm the pita bread or flatbreads in a microwave or oven to make them soft and pliable.
  6. Assemble the shawarma: Lay a piece of warm bread on a clean surface. Place some of the cooked meat in the center of the bread. Top it with your desired accompaniments, such as lettuce, tomatoes, onions, pickles, and sauces.
  7. Roll the shawarma: Fold the sides of the bread over the filling and then roll it up tightly into a wrap.
